Research in technology of sparkling wines, studying different aspects affecting CO2 release and bubbling. Studies on red wines winemaking and ageing related to colour stability and astringency. Influence of the saliva in the perception of astringency, focusing on the effect of glycosilation of the proline rich proteins and the mucins binding capability. Also have conducted studies about terroir effect on wine sensory analysis in the DOQ Priorat.
