Nowadays there’s a great knowledge about the metabolomica of wine to achieve wines with singular characters. This session will give some guidelines about this relationship between wine and chemistry. The first part will be a short physiological description of the senses implied in the sensory analysis. After this, a tasting session will be conducted focusing in aspects of colour, smell and palate properties of several wines from Miguel Torres, one of the most important cellars in the world, located close to Tarragona. These properties will be associated to different family molecules showing the relevance of winemaking and vineyard management in the quality of wine.
